Clearance Items you can actually use ROCK!!!

While cruising around Walmart this weekend I came across some Clearance "Back to School" items. I know that the Back to School craze is over but there are still some really great folders and paper products out there at a great price.



I found these file folders and paper pads for 20 cents each!! That's right for less than a dollar I got all four items. What a score!! The file folders are a 3 pack so really I got 6 folders for 40 cents! With both the boys in school and my husband as well, I NEED to organize our schedules. I found that the inside of our pantry is the best place to keep the calendar and all of our other important papers.




Here is the inside of out pantry door and you can see how I already added my new apple folder and paper pad!! Everyone in the family is color-coded so that if they take a quick glance at the calendar they know if the event is for them or not :) Getting organized and keeping our schedules is an ongoing task for me and I am always looking for bright and colorful ways to help me get there. Happy National Coffee Day!


Hooray! Today is National Coffee Day! We love Coffee in my family. I wanted share with everyone some info on the language of coffee and how to make some drinks.

In honor of National Coffee Day on September 29th, Eight O’Clock Coffee, America’s Original Gourmet Coffee, is demystifying coffee jargon—and explaining how to make a great-tasting specialty coffee drink at home, no fancy machines needed. Behold, your guide to creating a café coffee experience right in your own kitchen, courtesy of Eight O’Clock Coffee!

Latte-
Traditionally, this is made using espresso and foamed milk. The milk to coffee ratio is 3:1.
  • Make It At Home! Use a strong coffee, like Eight O’Clock Coffee’s Dark Italian Roast, and brew regularly. Pour some milk into a saucepan and place over medium heat. Whisk milk as it heats to make it frothy. Pour some of the coffee into a mug, add some hot liquid milk and spoon the foamed milk on top.

Café Mocha- This is simply a latte with some type of chocolate flavor added in.
  • Make It At Home! Prepare using the latte instructions. Before adding the coffee and milk, pour 2/3 cup of hot chocolate mix into the bottom of the mug, add coffee and milk and stir until the mix has dissolved.

Café au Lait- Similar to a latte, but usually uses strong brewed coffee instead of espresso and has a 1:1 ratio of coffee to milk.
  • Make It At Home! Brew Eight O’Clock Coffee’s Dark Italian Roast, steam the milk and add equal parts milk (add this first) and coffee to your mug.

Cappuccino- Usually made with equal parts espresso, steamed milk and frothed milk.
  • Make It At Home! Follow the same instructions as the latte, but pour equal parts coffee and steamed milk into the mug and top with frothed milk. It’s great with cinnamon or chocolate sprinkled on.

Macchiato- A traditional macchiato is a shot of espresso with a bit of milk foam. We usually think of the caramel macchiato, which is very popular at coffee shops in the US.
  • Make It At Home! Make a tasty caramel macchiato using Eight O’Clock Coffee Dark Italian Roast. Heat milk in a saucepan and whisk until frothy, add a few pumps of vanilla syrup to your cup of coffee, top with milk froth and drizzle with caramel syrup.

Frappe- A frappe is a cold blended coffee drink with chilled coffee, sugar, milk or cream and ice blended together.
  • Make It At Home! All you need is 6-8 ounces of cold coffee (we like Eight O’Clock Coffee Original Blend), 2 Tbsp milk, 3/4 cup crushed or cubed ice and sugar to taste. Combine ingredients in a blender. You can also add 2 Tbsp of your favorite syrup—caramel, chocolate, vanilla—some people even add ice cream to make it thicker. The possibilities are endless, so get creative!

Pumpkin Coffee- Virtually every coffee shop has some kind of limited-time-only pumpkin coffee, a delicious fall flavor.
  • Make It At Home! Brew your own pumpkin coffee this fall or any other time of year you feel a craving coming on. Use 2 tsp of pumpkin spice for every 3 Tbsp of Eight O’Clock Coffee Original Blend. Combine the pumpkin spice with the coffee grounds and brew. Sweeten to your desire.

Espresso: A concentrated coffee brewed by forcing a small amount of nearly boiling water under pressure through finely ground coffee beans.
  • Make It At Home!  Espresso machines are typically very expensive, but you can come close to the real deal with your regular coffee pot. Choose a dark roast, like Eight O’Clock Coffee’s Dark Italian Roast, and grind the beans as finely as possible. Double the coffee filter, and pack down the coffee grounds into the filter (use 1 tbsp for every 1/4 cup of espresso). It’s a great option that replicates the strong, bold flavor espresso and cappuccino aficionados love.

But wait. Am I even a dog person?

Meet Chewie!!!

I have never thought of myself as a "dog person." We had dogs in and out of our lives growing up, they were never long term though. My Mom was so busy with 5 kids that adding a dog to the mix always seemed overwhelming to her and to our lives. I believe you are a dog person or your not. My husband's family had dogs when he was growing up that lived for 15+ years. They are dog people. I have questioned whether or not I am a dog person. I like dogs, I want my kids to have a dog growing up but with three small children a dog was not in our immediate future... Until now.

It kind of happened suddenly. My little brother (who's 25 years old) text me two weeks ago telling me that he was going to start working more and more hours at work and he was worried about his 5 month old puppy.

*Side Note* You see my brother is a bachelor living in an apartment in Seattle and got a Boston Terrier/Bulldog puppy. He was only working four hours a day and has a roommate that would help out with the pup when he was gone.

Ok, now back to the text I got. He tells me that he is going to have to figure out what to do with his puppy named Chewie. Can you say Star Wars nerd? Just kidding love you bro :) Anyways he is all upset that he will have to give him up and doesn't think it's fair for Chewie if he has to be gone all day. I feel bad for him and Chewie (who I had never even met yet) and tell him he will figure it out.

A few minutes later the next text I get is, "Do you want him?"

My thoughts: Ummmmm what? A dog? Here at my house with my crazy life? A puppy who has lived a nice quiet life in the city with two bachelors and no backyard, small children or 24/7 noise?

There is a bit of awkward silence (as much as there can be with a text) and suddenly there is a picture of sweet little Chewie. That sneaky brother of mine sent a picture!

My thoughts: Oh dear, he is cute. And the boys would really love him. And JJ was just talking about wanting a dog. And the poor guy would have to go to strangers if we didn't take him. And oh dear, he is cute. 

So I text him back that I will have to talk to the hubby.

My thoughts: Surely hubby will say no. We are already knee deep in kids and a puppy is just like adding another baby. Surely he will say no and I won't have to be the bad guy!

I thought wrong. The first question my hubby asks me is how big is he? Oh my he is not saying no! We are doomed. As the day goes on there are many texts between me, my little brother and the husband. And as you can see by the end of the day we had a dog. The next day we took the boys to my brothers apartment in Seattle to pick up their new dog. It was exciting and special. The boys were ecstatic and my little brother was happy he was going to stay in the family. My brother knew that we would love him and he could come and visit whenever he wanted. It has been almost two weeks now and things are going really well. He is just as sweet as can be, loves the boys and is even good with the baby. He is blending nicely into our family and we just love him. So maybe I am a dog person after all? Or maybe not, it may still be too early to tell (wink wink.)

Getting back into the groove...

Hi. It's Sam...remember me? The one with 3 small children that seem to consume all of my time? It's true, right now it is all about kids, carpool, and my sweet baby girl. Our lives are so busy but I wouldn't want it any other way! It seems that time is getting away from me and I haven't been popping in here as frequently as I would like. This summer was a whirlwind! We took our family vacation to California and when we got back it was still go go go!

Well school has started and we are finally getting into a routine. JJ (my 5 year old) started Kindergarten (half day) and just loves it. I love having a child in elementary school, there is just something so great about children starting their education. Liam (my 2 year old) is in Preschool two days a week. He is a busy guy who demands our attention anyway he can get it. Ashley is now 9 months old and is just a doll. She is so sweet and smiley and always wants to do what her big brothers are doing.

As for me I feel like I am still learning what it is to be a mother of three, I know I have been one for 9 months now, but sometimes three children can feel like ten :) I am getting braver and braver about taking three small kids, 5 years old and under out by myself. I am remembering to enjoy these times with them because someday they will be all grown up. I find myself in auto pilot and that is no way to enjoy the little things in life.

I am so excited that the weather is changing, fall is my favorite time of year. I love the leaves changing, the chill in the air, pine cones on the ground, apple cider, Halloween, Thanksgiving and more!! I like to think that I am most motivated in these Fall months. I can't wait to share what we have been doing and what we will be doing to celebrate the change of the season. My boys are already talking about Halloween costumes, JJ's 6th birthday and what they want for Christmas!!
