Peanut Butter Toffee Cookies Recipe


I know a lot of people think milk and cookies are a kid thing, but believe me, they're not. I know some grownups who indulge in this ritual on a regular basis and it makes life more pleasurable. I happen to be one of those people, and so finding a new cookie recipe that I love and can make for my family is a real pleasure in my book.

I think a home baker who has a good list of cookie recipes to rely on can always whip up a batch on the spur of the moment. My granddaughter Ashley will sometimes ask me if we can bake something and cookies are often what she chooses to help me make. What four year old doesn't love cookies?

So milk and cookies are a regular treat around our house and I wouldn't have it any other way. This cookie recipe is quick, easy, and utterly delicious.

Recipe for Peanut Butter Toffee Cookies

Ingredients:

1/2 cup (1 stick) butter, softened
1/2 cup creamy peanut butter
1 1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
2 cups chopped chocolate covered toffee candy

Directions:

Preheat oven to 350 degrees.
In a large bowl, beat together butter and peanut butter until smooth. Add sugars, baking soda, and baking powder. Beat together until combined. Beat in egg and vanilla. Stir in flour, stir in candy pieces.
Roll dough into 1-inch balls and place on cookie sheet lined with parchment paper. Bake for about 10 minutes, or until golden brown. Let cool on a wire rack.

Makes 24 cookies.

Chunky Peanut Butter Cookies Recipe


It's almost back to school time here in the Seattle area for my grandchildren. It's been a really good summer for them, their mom has kept them busy with fun activities that they have loved, but it's time to get ready for the school year ahead.

For some reason, peanut butter cookies always make me think of elementary school. It must be because my own mother packed them in my lunch on occasion, and I can still recall how wonderful they smelled, and how delicious they tasted. Good memories for sure.

This recipe for Chunky Peanut Butter Cookies is from Martha Stewart, and it's very quick and easy. They always turn out just crispy enough, but just soft enough to melt in your mouth. Pair them with a glass of milk, and they are pretty near perfect.

I know I'll be making a lot of  these cookies to tuck in lunch bags, and have on hand for afterschool snacks for my grandchildren. And if you have any leftover, they keep well in an air tight container for up to a week.

Recipe for Chunky Peanut Butter Cookies

Ingredients:
  • 1 1/2 cups crunchy peanut butter
  • 1 cup packed light-brown sugar
  • 1/2 cup (1 stick) softened unsalted butter
  • 1 large egg
  • 1 1/2 cups all-purpose flour, (spooned and leveled)
  • 1 teaspoon baking powder
Directions:
  1. Preheat oven to 350 degrees. In a medium bowl, whisk together flour and baking powder; set aside.
  2. In a large bowl, beat peanut butter, sugar, and butter until smooth. Beat in egg. Gradually add flour mixture, beating to combine.
  3. Pinch off dough by the tablespoon; roll into balls. Place 2 inches apart on parchment-lined baking sheets. Using a fork, press balls in a crisscross pattern, flattening to a 1/2-inch thickness.
  4. Bake cookies, rotating halfway through, until lightly golden, 18 to 22 minutes. Cool cookies on a wire rack.
Makes 2 dozen cookies.

Recipe For Peanut Butter Swirl Brownies


I seem to be having a little obsession with peanut butter lately. Recently, I've made 3-Ingredient Peanut Butter Bites, Chocolate Cupcakes With Whipped Peanut Butter Frosting, and today I made these Peanut Butter Swirl Brownies.

Yes, I do love peanut butter, and it certainly goes together with chocolate to make some of our favorite desserts. These brownies are packed with delicious flavor, and if you are a peanut butter fan like I am, you'll love them.


After making one of my favorite brownie recipes, I simply stirred two tablespoons of peanut butter into the batter, and poured it into the pan. Then I dotted the top with peanut butter, and took a knife to swirl it through the batter. So easy, and so good!!


For extra peanut flavor, you can also add some chopped peanuts to the batter. These are perfect for kids and adults, and I'm taking them to a friend's potluck dinner for everyone to enjoy.

Recipe for Peanut Butter Swirl Brownies

Ingredients:

baking spray
4 large eggs
1 cup sugar
1 cup packed brown sugar
8 tablespoons melted butter
1-1/4 cups cocoa powder
1/2 cup flour
1/2 teaspoon salt
1/3 cup, plus 2 tablespoons creamy peanut butter

Directions:

Preheat oven to 350 degrees. Line a 9x9 inch baking pan with foil, with foil hanging over 2 sides.
Spray foil lightly with baking spray.
In a large bowl, beat eggs at medium speed for 1 minute. Add both sugars. Add remaining ingredients and beat until combined. Add the 2 tablespoons of peanut butter and stir in well. Pour the batter into the pan. Drop small blobs of the remaining 1/3 cup peanut butter evenly on top of the batter. With a table knife, swirl the peanut butter into the brownie batter. Bake for 25 minutes, or until a toothpick inserted into the center of the pan comes out clean.
Let cool completely before cutting.

Makes about 12 brownies.

Chocolate Cupcakes With Whipped Peanut Butter Frosting


One of my very favorite food combinations is chocolate and peanut butter. I love it so much but wanted something more that just my favorite candy to enjoy.

Cupcakes are always welcomed by friends and family, so these were the perfect answer to a quick dessert, and also satisfied my chocolate and peanut butter craving.

The peanut butter frosting on these cupcakes is made with cream cheese, a frosting that I enjoy making and my family really loves.


The chocolate cupcakes is an easy recipe, and I always think homemade tastes so much better than boxed mix.

And if you keep the baking essentials well stocked in your pantry, you can be ready to bake so many yummy treats as a moments notice.

I made these cupcakes just for fun to have for dessert. My family loved them, and this recipe is definitely a keeper.


Recipe for Chocolate Cupcakes with Whipped Peanut Butter Frosting

Ingredients for cupcakes:

1 1/3 cups all purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
1 cup milk

Directions for cupcakes:

Preheat oven to 350 degrees. Line cupcake tin with paper liners.
Sift together the flour, baking powder, baking soda, cocoa, and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla.
Add the flour mixture alternately with the milk. Beat well. Fill the cupcake liners 3/4 full.
Bake in preheated oven 16-18 minutes, or until a toothpick inserted comes out clean. Cool completely before frosting.

Ingredients for frosting:

1/2 cream cheese, softened to room temperature
1/4 cup creamy peanut butter
1/4 cup confectioners' sugar
1/4 cup unsalted roasted peanuts, chopped

Directions for frosting:

With an electric mixer on low speed, beat cream cheese, peanut butter, and confectioners' sugar in a bowl until smooth, about 2 minutes.
With a small spatula, frost cupcakes and sprinkle with peanuts.

Makes 18 cupcakes.

Easy 3-Ingredient Peanut Butter Bites





Peanut Butter cookies are one of my very favorite kinds of cookies. I've been making them for years, first for my own children, and now for my grandchildren.

I do have my regular recipe that is very yummy, with flour and all the usual ingredients. But when I came across this very simple, 3-ingredient one, I just had to give it a try.

These little cookies are really good, with a very intense peanut butter taste. I also like the small size,
perfect for little fingers to hold.

In fact, these cookies would be great to make with your kids. The batter is rolled into1-inch balls, just like playing with play dough.


Recipe for 3-Ingredient Peanut Butter Bites

Ingredients:

1 cup chunky peanut butter
1 cup sugar
1 egg

Directions:

Preheat oven to 350 degrees. Lightly wipe a baking sheet with vegetable oil.

Place all the ingredients in a medium bowl, and stir until well blended. Shape the dough into 1-inch balls, and place them on the baking sheet.

Bake for 8-10 minutes, or until the bottoms are golden brown.

Makes 24 cookies.
