Chocolate Sprinkled Donuts Recipe For Spring


Spring is finally coming and even though it's still a few days away, I'm very excited. It's been a very cold and rainy winter in the Seattle area this year, and I'm done with it. We have had more power outages this year than I can ever recall, and it can be so frustrating to try and get things done when you have no electricity.


So the last time we had a power outage, as soon as it came back on, my granddaughter Ashley and I decided we needed to make donuts to celebrate. She is my little baking buddy and she would have us bake everyday if I let her. But I was ready to celebrate the return of our electricity and baked donuts are something that can be made quickly and with little fuss.

I always try to have different varieties of sprinkles on hand because they can turn something plain into something fun and festive.

Since I love being frugal, I'm always on the hunt for a good deal and I found a good sized container of these sprinkles at Target for only a dollar. Now that's a bargain!


A lot of baked donut recipes call for buttermilk, but since I don't keep it on hand, I always have to plan ahead and buy some before I can make donuts. I was happy to find a recipe for these cake donuts that doesn't require buttermilk, so it's perfect for whipping a batch up whenever you feel like it.

These are rich and chocolaty, and super simple to put together. Since my granddaughter was helping to make these, I was glad the recipe was so easy.

If you love donuts, I recommend buying a donut pan. I have the regular size pan, and recently bought the mini size, which makes cute little donuts that my family loves.



Recipe for Chocolate Sprinkled Donuts

Ingredients:

1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg
1/2 cup milk
1/4 cup butter, melted and cooled

For glaze:

2 cups confectioners sugar
about 6 tablespoons milk
1/4 teaspoon vanilla extract
sprinkles of choice

Directions:

Preheat oven to 350 degrees.

In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt. In another bowl, beat egg to blend with milk, melted butter, and vanilla.
Add flour mixture and stir just until all ingredients are combined. Spoon batter 2/3 full into a well greased donut pan.
Bake 8-10 minutes. Let donuts cool on a wire rack before glazing.

To make the glaze, whisk together the confectioners sugar, milk and vanilla. Dip cooled donut halfway into the glaze, place on wire rack, then decorate with sprinkles.

Makes 12 donuts.

Double Chocolate Walnut Donuts Recipe





The other day when I was at the grocery store, at my favorite coffee shop, and out running errands, I kept seeing donuts. Donuts seemed to be everywhere, but I resisted buying any, I didn't need donuts, right?

When I got home, I still wanted donuts, so I pulled out my donut pan and decided to make these delicious Double Chocolate Walnut Donuts, which I think are just as good as any bakery sells.

One of the great things I love about making donuts is that, except for the buttermilk, I always have the ingredients on hand. I used to think they would be hard to make but they aren't, in fact it's very easy.

These donuts are chocolate, with a chocolate glaze, and can be made with nuts or sprinkles, or just left plain. Either way, they taste great.


Recipe for Double Chocolate Walnut Donuts

Ingredients:

 1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup brown sugar, packed
1/2 cup buttermilk
1 large egg
4 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract

For the Chocolate Glaze:

 1 1/4 cup powdered sugar
3 tablespoons unsweetened cocoa powder
big pinch salt
4 tablespoons whole milk
2 teaspoons pure vanilla extract

1 cup walnuts, chopped small

Directions:

 Preheat oven to 350 degrees. Spray a donut pan with a light coating of nonstick baking spray.
In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and brown sugar.
In a small bowl, whisk together buttermilk, egg, melted butter, and vanilla extract until thoroughly combined.
Pour the wet ingredients into the dry ingredients and fold together until all of the ingredients are well combined. Use a small spoon to portion batter into the prepared doughnut baking pan.  Each doughnut mold should be about two-thirds full.  Bake doughnuts for 10-12 minutes or until a toothpick inserted into one of the doughnuts comes out clean.  Remove from the oven.  Allow to rest for five minutes before inverting doughnuts onto a wire rack to cool completely.  Allow doughnuts to cool completely before glazing.
Repeat the baking process until all of the batter is turned into doughnuts.

 To make the glaze, in a medium bowl whisk together powdered sugar, cocoa powder, and salt.  Add 2 tablespoons of milk and all of the vanilla extract.  Whisk to combine.  Mixture may be thick.  Add milk, a tablespoon at a time, until the glaze is thick but still pourable.
Dip each donut about halfway down into the chocolate glaze. Place on a wire rack, and then sprinkle on walnuts.
Let the donuts sit for a few minutes to settle.

Makes 10 donuts.

Celebrate Friends and Family This Valentine's Day With Red Velvet Donuts

I know Valentine's Day is usually thought of as a time for romantic love, but I think everyone should have the chance to be included in the day. I remember when my five kids were growing up, it was always so exciting for them when they received their Valentines and treats at school.

Times haven't changed much, and I get to see that same giddiness and excitement as my grandkids share Valentine's Day with their friends at school and in the neighborhood. And since I'm a grandmother who likes to bake, it's the perfect day for me to bake treats for my family and friends to show I love them.

I've been a red velvet fan for many years, and so I thought that Red Velvet Donuts topped with
M&M's® Red Velvet chocolate candies would be a delicious treat to share. M&M's®  has been a part of every holiday for as long as I can remember, and I love how they now make so many great flavors for the seasons and holidays.


I have a lot of fun doing little things for my grandchildren. I have four, three boys and one girl, and they get a kick out of me making them treats and giving them little presents on Valentine's Day.

Besides buying them Valentines, I'll be putting together a bag of treats, including the M&M's® Red Velvet flavored candies. Have you tried these?? Oh my, they are so good, and really do taste like red velvet.


I used to think that the only way to make a good donut was to fry them in hot oil. That all changed when I bought a donut pan and can now make a batch whenever I want to. It's so easy!!

Our next-door neighbors are a wonderful older couple whose children live far away and rarely seem to visit. I'm blessed to have my children all around me, and I can't even imagine how lonely this couple must feel.

During the holidays I started sending over food and desserts, and they were so very thankful for the attention. So on Valentine's Day morning, I'm going to whip up a batch of these Red Velvet Donuts and take them over. I don't know who it will make happier, me or them.


If you've never made a red velvet batter before, it can be a little startling. It really is red to start out, and the amount of food coloring you put in can make a difference.

This is an easy batter to put together that includes buttermilk. This recipe makes about ten donuts, but you can easily double it if you are making donuts for a large amount of people.


After the donuts have baked and cooled, dip them in a powdered sugar glaze. I like to dip them twice since the glaze can be a little transparent. This can be a bit of a messy job, so make sure you have something underneath the cooling rack to catch the glaze drips.

These are such a great color, and I love that red velvet taste. Yum!!


Sprinkling the tops of the donuts with the crushed red velvet M&M's®  makes these donuts taste fabulous. Being such a red velvet fan, I've tasted a lot of it, and let me tell you, this combo is terrific!

I think I'll be heading back to Walmart to pick up a few more bags just so I can make these donuts all through the year, and not just for Valentine's Day.

I crushed up the M&M's®  with my rolling pin, but you could do it in the food processor if you like.



Recipe for Valentine's Day Red Velvet Donuts

Ingredients: 

1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons unsweetened cocoa powder
1/3 cup granulated sugar + 2 tablespoons
1 large egg, lightly beaten
1/3 cup buttermilk + 1 tablespoon
2 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
3/4 teaspoon distilled white vinegar
1/2 teaspoon baking soda
1/4 teaspoon red food coloring (or more if needed)
1 cup of crushed red velvet flavored M&M's®

For glaze:
2 cups powdered sugar
5-6 tablespoons milk
1/4 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees.
In a large bowl, combine flour, cocoa, sugar, salt and baking powder, then mix with a spoon. Add in buttermilk and egg, mixing to combine. Stir in butter. In a small bowl, mix baking soda and vinegar together, then add in vanilla. Add the mixture to the doughnut batter, then stir in red food coloring. Using a pastry bag or spoon  fill each doughnut mold 2/3 of the way full. Bake for 7-8 minutes, thne let cool for 5 minutes before removing. Transfer to wire rack. Dip each donut into glaze, and sprinkle with crushed candy.
To make the glaze, in a medium bowl, stir together all ingredients until smooth, add another tablespoon of milk as needed.




You can find M&M's® Red Velvet flavor at your local Walmart. These are a special Valentine's Day variety, so be sure to pick some up soon so that you don't miss out.

Toasted Coconut Donuts


I think I've mentioned before that ever since I bought a donut pan, I can make donuts whenever the mood strikes me. And it actually strikes me quite a lot.

When I lived in California, there was a donut shop practically everywhere you looked. Sort of like the equivalent of Seattle having a Starbucks on every corner. Well, I live across the water from Seattle now, and there are no donut shops around here. Or at least none I have found.


So of course that's the perfect reason to start making my own donuts, and my family loves them.

They are super easy to whip up on a lazy weekend morning, whenever we have a craving for them.

These Toasted Coconut Donuts are pretty fabulous, and if you are a coconut lover like I am, you will especially adore them.

This recipe makes a dozen donuts. You can make them without toasting the coconut if you are short on time, but they aren't quite the same. That extra five minutes or so that it takes is well worth it.


Recipe for Toasted Coconut Donuts

Ingredients:

For donuts:

Baking spray
2 cup all purpose flour
12 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon salt
12 tablespoons buttermilk
2 eggs
1 teaspoon coconut extract
2 tablespoons butter, melted

1 cup toasted coconut

For glaze:

1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon coconut extract

Directions:

In a medium frying pan, place 1 cup of coconut. On low-medium heat, toss coconut frequently with a spatula. Cook until toasted, about 5 minutes, and do not let coconut burn. Place in a small bowl when done, and set aside.

Preheat oven to 325 degrees. Lightly grease a donut pan with cooking spray.
In a large bowl, mix together flour, sugar, baking powder, and salt.
Add buttermilk, eggs, coconut extract, and melted butter. Stir to combine. Carefully spoon batter into prepared donut pan, filling 2/3 full.
Bake 8-10 minutes, or until donuts are baked through. Allow to cool 5 minutes and remove from pan.

To make the glaze, in a small bowl, combine powdered sugar, coconut extract, and milk.
Stir until smooth, adding more tablespoons of milk as needed. Dip cooled donut in to glaze, and set on rack. Sprinkle heavily with toasted coconut. Repeat with remaining donuts.

Glazed Blueberry Donuts


I'm loving all the delicious berries that are now in the stores and farmer's markets. It's hard to pass them up when they look so good.

I decided to combine my favorite vanillas donut recipes with some fresh blueberries, and they turned out to be a great combination. And there's a little less guilt for making donuts for no reason if they have healthy blueberries in them!!


 

 
Recipe for Glazed Blueberry Donuts

Ingredients:

 1 cup all purpose flour
6 tablespoons white sugar
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons buttermilk
1 egg
1/2 teaspoon vanilla extract
1 tablespoon butter, melted
1/2 cup fresh blueberries


Ingredients for glaze:

1/2 cup powered sugar
1/2 teaspoon vanilla extract
2 (or more as needed) tablespoons milk, heavy cream, or half & half

Directions:

 Preheat oven to 325 degrees. Lightly grease a donut pan with cooking spray or vegetable oil.
In a large bowl, mix together flour, sugar, baking powder, cinnamon, and salt.
Add buttermilk, eggs, vanilla extract, and melted butter. Stir to combine. Stir in blueberries. Carefully spoon batter into prepared donut pan, filling 2/3 full.
Bake 8-10 minutes, or until donuts are baked through. Allow to cool 5 minutes and remove from pan.

To make the glaze, in a small bowl, combine powdered sugar, vanilla extract, and choice of either milk, heavy cream, or half & half.
Stir until smooth, adding more tablespoons of liquid as needed. Drizzle glaze over donuts.

Makes 8 donuts.

Chocolate Sprinkle Donuts


I've mentioned before that now I have a donut pan, donuts are super easy to make. No frying, no hot oil to deal with, and no messy stovetop from oil spills. Yay, and donuts just seem to make people happy, or at least the people I know.

These delicious, super chocolaty donuts have a chocolate glaze on them, and are then dipped in colorful sprinkles. They are fun, cheerful, and perfect to make and eat on a rainy Seattle day.


Recipe for Chocolate Sprinkle Donuts

Ingredients:
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup brown sugar, packed
1/2 cup buttermilk
1 large egg

1 teaspoon pure vanilla extract

multi-color sprinkles

For the glaze:

4 tablespoons whole milk

Directions:

Preheat oven to 350 degrees. Spray a donut pan with a light coating of nonstick baking spray.
In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and brown sugar.
In a small bowl, whisk together buttermilk, egg, melted butter, and vanilla extract until thoroughly combined.

Yummy and Fun - Make These Vanilla Sprinkled Donuts



I'm just going to go ahead and say this outright, donuts make me happy.

Pretty much any kind of donuts appeal to me, and they truly can cheer me up when things aren't quite going my way. Of course, I'm not saying one should eat as a solution to their problems, but a donut or two can make me feel a whole lot better.

Ever since I bought my fabulous donut pan, baked donuts are a cinch to whip up in the kitchen, and it barely takes any time at all.
